Tzatziki (cucumber salad) 2 cups Greek yogurt can use plain if you can't find it. 2 tablespoon white vinegar 2 tablespoons olive oil 1 teaspoon mint 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 1 garlic clove, crushed in a garlic press 5 cucumbers, cubed Pinch of dill (opt) 1 scallion, chopped (opt) Directions: Mix yogurt , olive oil, white vinegar wisk together . In separate bowl put scallions, mint, salt, pepper, dill, and garlic. Add cucumber and toss to coat with dressing. Refrigerate 1 hour then serve.
