Skinny Buffalo Chicken Beatloaf Bites - I have a (full sized) meatloaf version of this on my Shrinking On a Budget Meal Plan. But I adore the idea of the individual servings. This lends itself to customizing for a picky eater - or for a family member who likes extra spicy!

Perfectly cooked, shaped eggs - and you can bake a whole lot simultaneously: Just grab a muffin tin and and very lightly oil each spot in the tin with either butter or spray oil. Then crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes. Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!

BREAKFAST! Pumpkin Muffins - only 2 ingredients. That's right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350, this is a Weight Watchers treat, very low cal.
