Smashed potato bites ETA 11/26/11- I made these today and they were great! I added some salt and pepper when I mashed the potatoes and used real bacon instead of bacon bits. I also made them in a casserole dish so I could bake the potatoes ahead of time and then add the cheese and bacon at the last minute. I then stuck them under the broiler to melt the cheese and heat them back up.
