Funeral Potatoes 2lb frozen hash brown potatoes 2 c cheddar cheese 1/2 c butter 1 1/2 tsp. salt 1 onion 1 can cream soup chicken or mushroom 1 c sour cream 2 cps corn flakes 1/4 cp butter mix hash browns, cheddar cheese, ½ cup melted butter, salt, onion, soup, and sour cream. Spray a 9 x 11 dish Pour mixture into pan Do not pack down tightly. mix Corn Flakes and ¼ cup melted butter spread on top of casserole. Bake at 350 degrees F for 45 minutes til top is lightly browned
Chicken Alfredo Biscuit Bake... This is AMAZING... It uses a creamy cheesy Alfredo sauce that the veggies (I used broccoli, but about any veggie will work) rest in. Then top with Pillsbury Grands that rest on the Alfredo sauce so the bottoms taste like dumplings while the tops are crispy crunchy... This is a great way to get kids to eat their veggies and it looks stunning! This is only half, come see the full circle.
Chicken Cordon Bleu Crescent Roll ups...Has nothing to do with the cooking school. Not even French and really not a classic at all (invented in 1967). But with just a bit of leftovers it makes a delicious snack and a great use of a Rotisserie Chicken!!! All of the tastes of the non-classic rolled up bite size (appetizer party tray size) GREAT for a Super Bowl party!

White Chicken Enchiladas-w green chili sour cream-10 soft taco shells-2c cook shred chicken-2c shred Mont. Jack cheese-3Tbsp.butter-3Tbsp.flour-2c chicken broth-1c sour cream-1(4 oz)can diced green chilies-350F-Grease pan-Mix chicken & 1c cheese-Roll in tortillas-put in pan-In sauce pan,melt butter,stir in flour-cook 1min-Add broth-whisk smooth-over med heat til thick-add sour cream & chilies-Do not let boil-Pour on enchiladas-top w remaining cheese.Bake 22 min-then broil 3 min to brown cheese.
