BBQ chicken... Your fav BBQ sauce, some brown sugar, a lil garlic powder and a squirt of vinegar.. Line the crockpot with chicken then add the mixture on top set 4-6 hrs on low.. Simple low fat meal..

These are a perfect weeknight meal. They were super easy to pull together, and are a great comfort meal. The serving size is a little small (only one 6in enchilada), but the recipe is very generous with the cheese, so I can't complain too much! :) We'll be adding these to our dinner staples!
