Dairy Free Eggnog Coconut milk is such a great substitute for milk. It adds a nice smooth flavor that is so enjoyable during the holidays. If you want to go crazy you can totally add alcohol into this recipe and it still is going to come out so amazing you’ll go back for more! Prep time 5 mins Cook time 5 mins Total time 10 mins Serves: 6 Ingredients • 2 cups coconut milk • 2 large eggs plus 1 egg yolk • White rum or bourbon (optional) • 1 tablespoon of vanilla • 3 drops of stevia extract • ½ teaspoon ground nutmeg • ½ teaspoon of ground cinnamon Freshly grated nutmeg, for garnish Over medium heat, warm the 1 cup milk and vanilla in a saucepan. At the same time whisk or blend the egg yolks, sugar and spices in a blender. Now you can add slowly pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the saucepan. Continue to stir constantly with a spoon until the eggnog begins to thicken, about 6-8 minutes. Remove from the heat and stir in the remaining 1 cup milk. Pour the eggnog into a large bowl and place in fridge until cooled. Spiking the eggnog with liquor is totally optional but I would suggest not missing the garnish part with topping each glass of eggnog with nutmeg.
