SPAGHETTI SQUASH GREMOLATA -- Very yummy. I wanted to do a casserole style thing, so I added a step where I put it all together in a casserole dish and layered in Parmesan. I expect mozzarella would work too. 15 mins at 350 was good enough. Also added in some hot Italian sausage because I love meat.

Raspberry Lemon Whoopie PIes -- Was a hit at work! Better made fresh w/o refridgerating.
Breakfast Protein Cookies -- skipping the protein powder. Also a pretty good health food.
Buffalo Chicken Mac and Cheese. A slight disappointment. Needs at least double the cheese and hot sauce next time I make it.
Deep Dark Chocolate Cookies. No flour or butter. Definitely make sure the chocolate chip chunks are not on the bottom, and cook them for the full 10 mins even if they look done! Came out amazing! Will probably double the batch next time.
After doing this 2x with strawberries instead of blueberries, I've found it to be gross! Needs more sugar, I guess! Not healthy that way. Easiest breakfast ever! 1/4 cup oats, 1 egg, 1 tsp brown sugar, handful blueberries, splash of milk, dash cinnamon. Mix it all up. Stick in coffee mug in microwave for 2 minutes.
Tin foil, lemon, salmon, butter – Wrap it up tightly and bake for 25 minutes at 350 °. Simple and delicious!

Pumpkin french toast bake Got pumpkin and it was great! A lot like bread pudding, it was delish! The comments about the purée in this are accurate: I couldn't taste the pumpkin too much. When I try it again I will add more pumpkin and less eggs. Baked for 35 mins and it was good, may try closer to 40 to see if it firms up more. Overall great Sunday morning brunch with not too much work!
