An excellent caramel cake recipe. You will definately need to double the icing recipe to make a thicker layer. Enjoy!

    I wish I could post a photo of just how bad this cake looks. It's comical, really. I followed the recipe EXACTLY! Each layer of the cake is only a bit over an inch thick. Not an issue if it tastes good but from the edges that I cut so that the layers were even..its terrible! The frosting is a dribbling mess! When the reviews say its more like an icing, they are correct! It happens to be oozing off the cake plate onto my cabinet as I write this! Of all the Pinterest recipes I've made, this is BY FAR, the worst review/recipe I've made so far. YUCK! DONT WASTE YOUR TIME!

    There are NO WORDS for how YUMMY these are! A PERFECT desert!! These should be called HAPPY ENDING CUPCAKES - because not everyone needs a wedding :) Suggestions: make 1.5 frosting recipe, add a little less almond to the frosting, go heavy on the Raspberry filling, they're better after being refrigerated. Coconut on the frosting would be good. Just fabulous!

-Fannie Mae Trinidad recipe: 1 lb dark chocolate 1 cup whipping cream 1 lb white chocolate 1/2 cup small flake unsweetened coconut 1 T canola oil Toast coconut over med low heat 3-5min//In other pan Bring cream just to a boil. Remove from heat add chopped dark chocolate. Smooth. Place in fridge 2hrs, then form balls. Dip balls into white choc mixed with coconut and oil. Return to freezer until hardened. Serve at room temperature.

    THE BEST CARROT CAKE YOU WILL EVER HAVE IN YOUR MOUTH!!! ok..my changes: Double cinnamon. Dont split layers in half. Make 3 layers or 1.5 the cake recipe and make 3-9in. layers. 35-40mins in the oven. More nuts next time.

Suggestions: 1.Use more raspberries or less preserves because as is, the raspberry mixture is very sweet. 2.Chill everything before assembling. 3.Of course I used more Gran Marnier than the recipe! Soak all the poundcake BEFORE assembling so that pound cake is coated more uniformly. THIS DESSERT IS BEAUTIFUL!!
