Cuban Pot Roast Recipe – Low Carb and Gluten Free **I made this last night and it was a HIT with 4 kids!! :) I would definitely make it again. I substituted red enchilada sauce for the salsa verde because that is what I had in the pantry. It was DELISH. :) I served it with yellow rice and black beans and fresh Cuban bread. yummo!!! Susan
