Add olive oil, lemon zest, lemon juice, garlic, thyme and Parmesan; season with salt and pepper, to taste. Gently toss to combine. Place into oven and bake for 12-15 minutes, or until browned and tender, tossing occasionally. Serve immediately.

Raspberry Peach 1 1/2 cups fresh peaches, pitted and chopped 1 1/2 cups frozen raspberries 1/4 cup Medjool dates, pitted (about 3-4 large fruits) 1 cup unsweetened almond milk 2 tbsp chia seeds 1/2 tsp vanilla extract 2 cups ice Sweetener, to taste Blend together all the ingredients, except the ice, until smooth. Add the ice and blend again until frosty. Taste, and sweeten as desired. Makes two 16-ounce servings.
