Today we bring you an absolute gem: gluten-free ginger bread! Yes, it's possible and yes, it's as delicious as it sounds! Gluten-Free Ginger Bread Ingredients: 1 3/4 C oat flour 2 1/2 tsp ground cinnamon 2 1/2 tsp ground ginger 2 tsp baking powder 3/4 tsp nutmeg 1/2 tsp baking soda 1/4 tsp salt 1/3 C chopped crystallized ginger 2 eggs 1 egg white 1/2 C coconut oil 1/2 C molasses or maple syrup 1/3 C Sweet-n-Natural 1 C canned pumpkin Instructions: Preheat oven to 350 degrees. Coat a 9x9 baking dish with coconut oil (to prevent sticking). In a large mixing bowl, combine flour, spices, baking powder, nutmeg, baking soda and salt in a large bowl. Stir in crystallized ginger. In a separate (medium-sized) mixing bowl, whisk together eggs, egg white, and molasses (or syrup). Whisk in pumpkin. Fold into dry ingredients until just combined. Don't over mix! Pour into pan. Bake for 35-40 minutes or until gingerbread starts to pull away from the side of the pan. Toothpick inserted should come out clean. Remove from oven, allow to cool and enjoy!

The most Ah-Mazing Roasted Potatoes! These are so stinkin' easy to make! Cook a pierced potato in the microwave for 6-7 mins. (flip every couple mins.) til soft all the way thru. Cut in half, then into squares (just down to skin). Season with butter, parmesan & Lawry's. Place in oven on aluminum foil-lined pan and BROIL for 10-15 mins. Enjoy!!!
