Rose Apple Pie Bites: Use Pink Lady apples if you can, if not, any firm red will do. Slice apples thinly, simmer gently for about 10 mins in 4c of apple juice & 2c sugar. Should be flexible, but still firm. Let slices drain well & cool in a colander. Cut thinly rolled pie crust into strips. Lay apple slices end to end, slightly overlapping w a little extra pie crust at the bottom. Fold extra pie crust over to hold apples in place. Roll into shape. Bake at 400F until browned & centers are cooked

A pinner says: Stopped buying the jar stuff once I tasted this homemade salsa. Simple and delicious: Chop 5-6 Roma tomatoes,1 small onion and 1/2 cup fresh Cilantro. Mince 2 seeded Serrano or Jalapeño peppers and 1 clove of garlic. Add 2 tbsp. freshly squeezed lime juice and salt and peper to taste. Mix everything together and let sit overnight for flavors to meld.
