Clever - use baked sweet potato slices as "buns" for these breakfast sandwiches. I made these during week 1 of our paleo switchover; half the family doesn't like sweet potato so I used purple potatoes for them instead. These sandwiches are really delicious! And the kids didn't even squawk about the spinach, so it's a winner. ;)
Warm Apple and Almond Butter breakfast. Made this today! I used four apples, chopped in small pieces; since we don't use a microwave, I baked it at 350 for 20 minutes (stirring halfway through). You can cook longer if you want softer apples. I bet this would be a great topping for pancakes!
Paleo Breakfast Burrito | Living Simply used 2 slices of turkey for each burrito and one scrambled egg per burrito. I put garlic salt, onion powder and pepper on the eggs and then rolled the eggs in turkey. You can use ham for this too.

1 baked potato 1 Tbsp butter 2 eggs 2 strips bacon, cooked. 2 Tbsp. shredded cheddar 1 Tbsp. fresh parsley, chopped. salt and freshly ground black pepper. Place 1/2 tablespoon of butter in the middle of each "bowl". Then gently break an egg into each "bowl", careful not to break the yolk. Top with bacon, cheese, parsley, and then season with salt and pepper. Bake at 350 degrees F for 25 min.
