The Ultimate Chopped Salad! - 1/2 tomato, *1/4 avocado, *1 medium cucumber, *1 tablespoon no sugar added dried cranberries, *3 cups iceberg lettuce salad blend, (with cabbage and carrots) , *2 cups spinach, *1 orange bell pepper, *1 tablespoon almonds sliced, *1 tablespoon pecans chopped, *1 tablespoon Italian dressing,(or your choice of dressing) *2 large egg, and *1/4 cup green onion.
Refrig. cucumber salad Mix cucumbers, onions, peppers and salt; set aside. Put vinegar, sugar, celery flakes and pepper flakes in a pot and bring to a boil. Remove from heat and add 2 handfuls of ice until melted. Place all veggies in large mouth canning jars (2 quarts or 1 half gallon jar). Pour mixture over cucumbers. Store in refrigerator.

Paula Dean Corn Salad 2 (15 oz) cans whole kernel corn, drained 2 cups grated cheddar cheese ( I used marble cheddar) 1 c mayo 1 c green pepper, chopped (orange or red ok) 1/2 c red onion, chopped 1 (10 1/2 ounce) bag coarsely crushed Fritos chili cheese corn chips Directions: Mix first 5 ingredients and chill. Stir in corn chips just before serving.

TACO PASTA SALAD •1 pkg(16 oz) spiral pasta •1 lb ground beef •3/4 c water •1 env taco seasoning •2 c shredded cheddar cheese •1 lg gr pepper, chopped •1 med onion, chopped •1 med tomato, chopped •2 cans (2-1/4 oz each) sliced ripe olives, drained •1 16 oz Catalina dressing • Cover and refrigerate for at least 1 hour. Yield: 10 servings.
