Zesty Italian Potatoes Red potatoes cubed with skin left on, drizzle with extra virgin olive oil, coat with a package of zesty Italian dressing mix and stir to coat, add minced onion for flavor, salt and pepper to taste. Cook 400 degree oven for 45 minutes or until tender. Top with grates Parmesan cheese.

These are always a hit and they make a TON. The best part is that the dough has no egg so you can eat your heart out. yum!

Strawberry Shortcake Martini (Strawberry Puree (makes 5 martinis):Simmer 16 oz frozen strawberries,1/2 c water,1/2 c sugar,2 T lemon juice 10 min til sugar is dissolved and fruit is soft. cool & blend til smooth. strain through a fine mesh strainer if needed.) 2 oz cake flavored vodka& 3 oz of strawberry puree in a cocktail shaker filled with ice and shake vigorously until chilled. Pour into a martini glass and top with dallop of fresh whipped cream, and garnish with a sliced strawberry.

Slice potatoes (2lg) into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.

this no bake dessert has been made in our house at least 10 times since thanksgiving...oreos, cream cheese, powdered sugar, chocolate pudding, and cool whip...all layered into yummy deliciousness!
