Rice Pilaf......this was so refreshing! It went well with the oven fried pork chops and green bean casserole! I used broken pieces of spaghetti noodles instead of orzo pasta. I used mahatma long grain rice instead of jasmine rice. After I removed the cooked rice from the stove, I added a half a cup of frozen garden peas and let sit with lid on for about 8 to 10 minutes long. Mmmmm!!!

Twice-Baked Cauliflower: Makes 6-8 servings Ingredients: 1 large head cauliflower 4oz. low fat cream cheese (do not use fat free) 1/2C low fat sour cream (do not use fat free) 1/4C minced green onions 1/4C freshly grated Parmesan cheese 6 slices bacon, cooked until very crisp & crumbled 1C reduced fat sharp cheddar cheese
