Until recently, I had never experienced the amazing-ness that is spaghetti squash. I kept hearing others rave about this magical squash, but I kept forgetting to look for it when I was at the grocery store. Then I caved. My first spaghetti squash recipe was met with great enthusiasm by both my husband and myself. And of course, we are now hooked!
Spaghetti Squash with Grilled Chicken and Sun-dried Tomatoes - WOW! This is delicious!! Very healthy, no carbs, this may be one of my new favorite meals!
Kung Pao Chicken
Cheesy Zucchini Quinoa. SUPER easy. I didn't have zucchini so I subbed in peas. The quinoa was creamy and gooey from the cheese, it just soaked it up. Great mac and cheese type side dish. Even took leftovers to work for a meal.
"Texas Trash" 1 package cream cheese 1 cup sour cream 2 cans (16 ounces, each) refried beans 1 packet taco seasoning 2 cups cheddar cheese, shredded 2 cups monterey jack cheese, shredded. Mix first 4 ingredients, then top with both cheeses Bake 350 for 25-30 mins.
"OMG Chicken" Just mix Sour Cream or Yogurt (1/2 c) and parm cheese (1/4 c). Spread over chicken breast in a baking dish, sprinkle italian bread crumbs on top and bake for 20-30 minutes. It's that easy?!
