These mint grasshopper cookies are so good! I honestly think of them as mint oreos. Except the cookies are soft because they're cake cookies. I would definitely suggest dying the frosting, mine look silly without it. Also, try using avocado or bananas ass replacements for the butter these cookies certainly have a TON of butter. Also, little melon ball size cookie dough will work just fine.
