Pumpkin French toast. I am soooo making this. Update: Made this, finally. It has more of a mild pumpkin flavor than I expected but it's very good. I used twice the cinnamon the recipe called for, plus I used cinnamon chip bread from Great Harvest - it was awesome. I will definitely be making this again.
Pumpkin Muffins - only 2 ingredients. That's right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. The end result is an amazing, incredibly moist muffin/cupcake with a hint of pumpkin flavor.---I have added mini-marshmellows to the tops, mini-choco chips, and also walnuts...so tasty and moist!!

Pumpkin Fluff Recipe: 1 (29 ounce) can pumpkin, 1 (5 ounce) box instant vanilla pudding mix (no milk), 1 (16 ounce) container Cool Whip, 1 (8 ounce) package cream cheese, 1 tsp. pumpkin pie spice (or to taste). Combine and Chill for 2 hours. Serve with Honey Maid Cinnamon Graham Crackers and red and green apples.
