Mini pineapple upside down cakes. I loved my mom's pineapple upside down cake growing up. This recipe is super easy to make and they are excellent! I use a larger muffin pan so the pineapple rings fit. A cupcake pan is too small. A+ recipe!
Could probably eat everyday. Recipe: Spaghetti with Spinach, Garlic, and Lemon. Always a hit. Serve as main course, or pair with grilled chicken or shrimp. I can make the noodles with zucchini or spaghetti sqaush, yum!
Gluten Free & Low Carb Zucchini Lasagna // This is a very good recipe. However, I would not grill the zucchini first. It made the zucchini rubbery. Its VERY delicious but next time I will just use fresh zucchini.
