￼ ￼ ￼￼￼￼ POSTED BY JASON ON JULY 21, 2009 ￼Cooking up a barbecue feast for your friends and family can (and will) be an all day affair. Depending on the size of your cut, briskets and pork butts can take every bit of 18 hours to slow smoke to perfection. As much as I like starving myself all day in anticipation of the gluttony that’s soon to come, my willpower tends to falter somewhere around the noon hour. Since the smoker is already chugging away, there’s no need to power up the oven for that well deserved mid-day snack. Instead, I prefer to toss in a few stuffed jalapeno peppers…especially the ones dubbed “Atomic Buffalo Turds”!!! These smokey treats are really easy to prepare, and you may even have most of the ingredients hanging out in your fridge already: 12 fresh jalapeno peppers 12 slices of bacon 24 little smokies 1 package of cream cheese (room temperature) 2 tsp paprika 1 tsp cayenne pepper Sweet barbecue rub ￼ To start the construction of the atomic buffalo turds, you’ll first want to wash and trim the jalapeno peppers. I highly recommend wearing plastic food prep gloves during the trimming portion to keep the jalapeno juices from soaking into your skin, so proceed with caution if you choose not to heed my advice. Trimming these guys is a relatively simple task. Simply chop the stem off and slice the pepper lengthwise to expose the seeds and vein. Using a spoon, scrape out the white vein and rinse under water to wash away the seeds. The cream cheese will ultimately counteract the burn from the peppers, so leave a good amount of the inner membrane in tact if you want to feel the heat. ￼ In a mixing bowl, combine the cream cheese, paprika and cayenne pepper. Using a butter knife, or a pastry bag, fill each jalapeno half with a generous portion of the cream cheese mixture. ￼ Top each one of the jalapeno “boats” with a little smokey. ￼ Wrap each of the smokey topped jalapenos with a half slice of bacon, making sure that the seam is directly on top of the little smokey. Secure the wrap by inserting a toothpick straight down through the overlapping edges of the bacon all the way through the little smokey. Stop just short of going through the pepper though, that way the cream cheese doesn’t leak out through the hole. Since bacon already contains a good amount of sodium, you’ll want to season the buffalo turds with a sugar based rub. Cowtown Rubs are among the staples in my spice rack, so I went with their Sweet Spot Rub this time around. If you’re the do-it-yourself type, a nice blend of brown sugar and cayenne pepper works great on these bad boys as well. ￼ Cooking the buffalo turds is a matter of getting the bacon done to your liking. My preference is smoke at 250 degrees for about an hour and a half. At this point the bacon isn’t overly crispy, but it’s definitely cooked enough to be bite through. If you prefer a crispier bacon, then I’d suggest kicking the temperature up to 300 degrees for about an hour. You’ll want to keep a close eye on the peppers though. If they overcook, then they’ll loose their stability and your turds will spill out all over your smoker. ￼ ￼Once your buffalo turds are cooked to your liking, remove them from the grill to cool down a bit before serving. At this point I would typically top them with a generous helping of Blues Hog Barbecue Sauce cut with a little cran-apple juice, but this time around I happened to have a bottle of hot raspberry sauce from the folks over at Traverse Bay Farms. I used this sauce a few weeks ago on some pulled pork sandwiches and was pleasantly surprised as to how well the raspberry flavor melded with the smoked pork, but this blew the sandwich out of the water. The flavor of the smokey jalapeno matches perfectly with the sweet fruity sauce, and of course it’s heat is in good company with the medley of peppers tasted in each bite. A spoonful of sauce on each turd and you can guarantee these tasty treats will disappear in no time flat! ￼

4th of July cake 2 boxes white cake mix (plus oil and eggs) Blue and red food coloring For cream cheese frosting: 1-1/2 pound cream cheese (3 – 8oz. packages, not low fat) 1 pound unsalted butter (4 sticks) 2 pounds powdered sugar 1-1/2 teaspoons vanilla 1. Preheat oven to 350F and grease two 8″ cake pans with nonstick spray. 2. Make cake mixes according to box directions. You will need to make one 8″ blue cake, and three 8″ red cakes. I dyed one batch of cake batter red; I split the other batch in half and dye one half blue and one half red. Try to use as much batter as you can for each cake, because you want to end up with thick cakes. 3. Bake the 8″ cakes according to box directions. Cool completely before going on to the next step. 4. The most complicated part of creating this cake is torting the red cakes. Pain. in. the. butt. I used a large serrated knife to cut the cakes. Torte two of the red cakes so that you end up with 4 or 5 thin and even layers. Try to make the layers as level as possible. 5. Use a knife to level off the blue cake (remove the “dome” that forms when the cake bakes). After the blue cake as been leveled, cut a hole out of the middle of the cake. I used a large round cookie cutter for this step. Using a round cookie cutter is a good idea because of the sizing consistency it provides. At the end of this step your blue cake should look like a donut — with a hole in the middle. 6. Use a knife to level off the last red cake. Once the cake is leveled, use the same round cookie cutter to cut a circle out of the red cake. Torte the circle you cut out to get three thin layers. 7. For the frosting, cream together the cream cheese, butter, and vanilla. Slowly add the cream cheese until you reach the desired consistency. I like thicker frosting, so I always add nearly 2 lbs of powdered sugar. 8. Time to assemble! Layer the first 4 or 5 full-sized red layers on a cake platter, adding cream cheese icing between each layer. Once the full-sized red layers are assembled, add the blue “donut” to the top. Fill the “donut hole” with the small red slices of cake, adding cream cheese icing in between each. Thoroughly frost the outside of the cake and decorate the top of the cake if you’d like to. I used red and blue frosting to create a spiderweb/fireworks design. 9. Before cutting into your cake, chill the cake in the refrigerator for a few hours so the frosting can set (and the cake will be easier to cut!). Enjoy!

Blueberry Breakfast Casserole: Buttermilk-Blueberry Breakfast Cake Serves 6-8 ½ cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 7/8 cup* + 1 tablespoon sugar** 1 egg, room temperature 1 tsp. vanilla 2 cups flour 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ½ cup buttermilk * 7/8 cup = 3/4 cup + 2 tablespoons ** This 1 tablespoon is for sprinkling on top 1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy. 2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt. 3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries. 4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.
Blueberry Breakfast Cake. Tasted like a giant blueberry muffin! I used frozen blueberries and had to keep it in the oven for a little less than 50 minutes.
