Main Dish: Mexican lasagne.
Mexican Lasagne Source: Nigella Kitchen by Nigella Lawson Ingredients: Sauce: 1 tablespoon garlic flavoured oil 1 onion, peeled and chopped 1 red bell pepper, seeded and chopped 2 green chiles, chopped, with seeds 1 teaspoon kosher salt or 1/2 teaspoon table salt 2 tablespoons finely chopped cilantro stalks 2 (14-ounce) cans diced tomatoes, plus 1 2/3 cups water to rinse out empty cans 1 tablespoon ketchup I added 1 lb. of cooked, ground turkey Filling: 2 (15-ounce) cans black beans, drained and rinsed 3 1/4 cups drained canned corn, from about 1 1/2 (15-ounce cans) 2 1/2 cups grated mature goats Cheddar, or cheese of your choice 8 soft flour tortillas (approximately 10-inch diameter) 1 round ovenproof dish, approximately 10 inches diameter and 2 1/4 inches deep Avocado Salsa, for serving, recipe follows Directions: Preheat the oven to 400 degrees F, slipping in a cookie sheet at the same time. For the sauce: Heat the oil in a saucepan on the stove and fry the onion, bell pepper and chiles (along with ground beef or turkey like I did...until meat is cooked through). Add the salt and cook gently for 15 minutes, and once soft, add the chopped cilantro stalks. Add the canned tomatoes then rinse the cans out with water and add this too. Spoon in the ketchup and let things come to a simmer, leaving the sauce (or salsa in keeping with the Mexican mojo) to cook while you get on with preparing the filling- about 10 minutes. For the filling: Mix the drained beans and canned corn in a bowl. Add most of the grated cheese, reserving some to sprinkle on the top at the end, and mix together. Start to assemble the lasagne by spooning about a third of the salsa into the bottom of your ovenproof dish and smear it about, then layer on 2 tortillas so that they cover the sauce overlapping slightly, like a Venn diagram. Add a third of the beans and cheese mixture covering the tortillas, and then about a quarter of the remaining salsa and another 2 tortillas. Repeat with another third of beans and cheese, and more salsa before layering on another 2 tortillas. Finally, add the last layer of beans and cheese, nearly all of the remaining salsa and cover with the last 2 tortillas. Spread the very last bit of salsa over the tortillas and sprinkle with the remaining cheese. Bake for 30 minutes, and let it rest for a good 10 to 15 minutes before slicing like a pizza, and eat with the avocado salsa. Make Ahead Note: The lasagne can be assembled 1 day ahead. Cool the tomato salsa before assembling. Cover dish tightly with plastic and refrigerate until needed. Bake as directed in recipe, allowing an extra 5 to 10 minutes baking time and checking the lasagne is piping hot in centre before removing from oven. Freeze Note: The assembled but uncooked lasagne can be frozen for up to 3 months. Wrap dish tightly in double layer of plastic and a layer of aluminium foil. Thaw overnight in fridge and cook as above. Further Note: Leftovers should be covered and refrigerated as soon as possible. To reheat, put individual slices in ovenproof dish, cover with foil and reheat in oven preheated to 350 degrees F for 15 to 20 minutes. Check the lasagne is piping hot before serving. Wedges of leftover lasagne can be frozen for up to 2 months, tightly wrapped in plastic wrap and then either in foil or in resealable bag. Thaw overnight in refrigerator and reheat as above. Avocado Salsa 2 avocados 1 scallion, thinly sliced 3 tablespoons chopped green jalepenos from a jar or can Salt 1 tablespoon lime juice 1/4 cup roughly chopped fresh cilantro Halve the avocados, remove the pits, and then, using the tip of a sharp knife, cut lines down the flesh of each half, about a 1/4-inch apart and then the same across. Turn the avocado halves inside out, or otherwise release the pale green cubes into a bowl, then tumble in the scallion, chopped jalepenos, salt to taste, lime juice and most of the cilantro and toss gently to mix. Taste to see if any more salt is needed before scattering with the remaining cilantro and taking to the table.

Chocolate Covered Strawberries - SO EASY. 1) Cut strawberries in halves (if too big) and place each half in an ice cube tray. 2) Melt about 1/2 a bag of dark chocolate chips on a double boiler 3) Pour the chocolate over the strawberries 4) Put the tray of goodness in the freezer. 5) Remove tray from freezer and twist it so that the chocolate strawberries come out of the tray. Then EAT!

💞 Baked sweet potato "fries" with parmesan, cilantro and skinny sriracha dip, savoringthethyme >>>Baked Sweet Potato French Fries with Parmesan & Cilantro Ingredients: 4 sweet potatoes 2 Tablespoons olive oil 1/3-1/2 cup grated Parmesan cheese A handful of fresh cilantro, roughly chopped Salt and Pepper, optional Directions 1. Preheat the oven to 425 degrees Fahrenheit. 2. Peel, rinse and dry the potatoes. 3. Now, you can either: a. Use the proper blade on a mandolin to create ‘french fry’ shape or b. Cut it by hand. Depending on the size of the sweet potato, you may wish to cut it in half lengthwise but if it is small/short, don’t worry about it. Take a half of the sweet potato and cut it into large slices about 3/4 inch thick. Then cut them lengthwise at about 1/2 inch to 3/4 inch thick. 4. Toss them into a bowl, drizzle with the olive oil and mix well so that they are coated evenly. Bake them for 20-25 minutes depending on their thickness and how you prefer your fries. 5. Place the fries in a bowl and sprinkle on the cheese and cilantro. Seriously the BEST banana bread recipe I've found. So moist & stays fresh for days. I made muffins, but made a few changes. Subbed coconut oil instead of butter to make it dairy free. I only used 4 bananas because that's what I had. I added in 1/2 cup oats, 1/4 cup chia seeds, 1/4 cup ground flax seeds, 1/2 cup nuts, 1/2 tsp vanilla, and a few shakes of ginger and cardamom. Instead of 2 cups flours I used 1 cup whole wheat flour, 1 cup almond flour. I also made a crumble topping out of 1/4 cup almond flour, 1/4 cup brown sugar and a few shakes of the above spices. I sprinkled it on after putting the batter in the muffin pan. It made 15 regular sized muffins. I baked them for 20 min and they came out perfectly moist and tasted delicious!

I substituted half white and half whole wheat flour, and they still turned out just fine! For the filling One 10-ounce package frozen raspberries, not thawed***Try substituting different berries or a mixture of them! 1/4 cup plus 2 tablespoons sugar 1 teaspoon cornstarch For the glaze 3/4 cup confectioners’ sugar 3 tablespoons unsalted butter, melted 1 and 1/2 tablespoons heavy cream Instructions 1. For the dough: In a small saucepan, warm the milk over moderately low heat until it’s 95°. 2. Pour the warm milk into the bowl of a standing electric mixer fitted with the dough hook and stir in the sugar and yeast. 3. Let stand until the yeast is foamy, about 5 minutes. 4. Increase the speed to medium-high and beat until the dough is soft and supple, about 10 minutes longer. 7. Scrape the dough out onto a lightly floured surface and knead it with your hands 2 or 3 times. 8. Form the dough into a ball and transfer it to a lightly buttered bowl. 9. Cover the dough with plastic wrap and let stand in a warm place until doubled in bulk, 1 to 2 hours. 10. Line the bottom of a 9-by-13-inch baking pan with parchment paper, allowing the paper to extend up the short sides. Butter the paper and sides of the pan. 11.Turn the dough out onto a lightly floured work surface and, using a rolling pin, roll it into a 10-by-24-inch rectangle. 12. For the filling: In a medium bowl, toss the frozen raspberries with the sugar and cornstarch. 13. Spread the raspberry filling evenly over the dough. Tightly roll up the dough to form a 24-inch-long log. 14. Working quickly, cut the log into quarters. Cut each quarter into 4 slices and arrange them in the baking pan, cut sides up. Cover the rolls and let them rise in a warm place until they are puffy and have filled the baking pan, about 2 hours.*****I let mine rise for the two hours at room temperature, and then I covered them with plastic wrap at that point and popped them into the refrigerator overnight. I brought them back up to room temperature the next morning as the oven preheated. 15. Preheat the oven to 425°. 16. Bake the rolls for about 25 minutes, until they are golden and the berries are bubbling. Transfer the pan to a rack to cool for 30 minutes. 17. For the glaze: In a small bowl, whisk the confectioners’ sugar with the butter and heavy cream until the glaze is thick and spreadable. 18. Invert the rolls onto the rack and peel off the parchment paper. Invert the rolls onto a platter. Dollop glaze over each roll and spread with an offset spatula. Serve warm or at room temperature.
