INDONESIAN CORN CAKES ! This recipe is an adaption of a very famous Indonesian Corn fritter called “Perkedel Jagung”. It uses fresh corn and is spiced with kaffir lime leaf, chillies and garlic. The flavour is savoury and really delicious. The traditional version is shallow fried in oil – but I have experimented with a baked version and it is just as delicious. It also makes these really easy to make !

FRIED TEMPEH (TEMPEH GORENG) FERMENTED SOY BEAN CAKE Tempeh is a fantastic source of plant based protein with a unique nutty flavor. It has a higher content of protein, dietary fibre, and vitamins than tofu as it is less processed. Tempeh originated from Indonesia over 200 years ago. Whole soybeans are fermented into a cake form. The tempeh is usually marinaded in spices and shallow fried. Alternatively it can be used in stir-fry dishes or for vegetarian hamburgers.
