ROASTED BELL PEPPER & RED ONION I always food-prep a batch of roasted vegetables for the week ahead. Roast veggies are such a great addition to salads, to sandwiches, and as a side dish to any meal. This is a simple version with Bell-Peppers and Red Onion which goes well with pretty much anything !  Of course you can add other vegetables as well including zucchini, eggplant, carrot, sweet potato or pumpkin.

FRESH ALMOND MILK Making Almond Milk at home is very quick and easy. You can be sure that the result is fully wholesome and free of preservatives.  Commercial nut milks often include sweeteners, salt and oil and have a very low percentage of almonds as an ingredient (between 2-7%).  This easy recipe has a ratio of 14% almonds to water and nothing else added except optional vanilla paste (to taste). Prepare a batch on the weekend for the week ahead !
