Carrot Poke Cake - NOT better than Easter, though! The topping is a little special: it’s a sweet whipped combo of cream cheese, cool whip, & cool whip frosting. It’s topped with caramel sauce & chopped pecans, like any decent carrot cake should be!
These confetti eggs are called cascaronies and originated in Mexico. I learned how to make them many years ago when I taught preschool in the Hispanic community. Our family make and use them on Easter but I'm sure they would be just as much fun on other holidays as well.
