This chickpea vegan "tuna" salad is an easy, satisfying and delicious vegan alternative to the usual non-vegan sandwich fillers. Enjoyed by vegans and non-vegans, it is also much more affordable than tuna or chicken salad and it can be available for a weeks worth of lunches if prepared ahead. In our house, it never lasts that long!

HEALTHY BROCCOLI SALAD:  6 C broccoli (about 2 medium heads) . ½ C shredded carrots . ¼ C red onion . 2 large apples, finely chopped .  1/3 C sliced dry roasted almonds, or sunflower seeds or nuts of choice . 1/3 C dried cranberries (optional) ~ DRESSING: 3/4 C Greek yogurt . 1/4 C mayo or additional Greek yogurt . 2 T apple cider vinegar . 1/2-1 T honey or sweetener of choice, to taste . 1/4 t salt, to taste

Med. Grilled Chicken With Dill Sauce ~  YOGURT SAUCE:  1 garlic clove, mince . 1 C chopped fresh dill . 1 1/4 C Greek yogurt1 tbsp olive oilJuice of 1/2 lemon or lime . Pinch Cayenne . Salt, if needed ~ FOR CHICKEN: 10 garlic cloves, minced .1/2 t paprika . 1/2 t allspice . 1/2 t ground nutmeg .1/4 t ground green cardamom . Salt and pepper . 5 T olive oil, divided . 8 boneless, skinless chicken thighs . 1 medium size red onion . Juice of 1-2 lemons

French Dip Sandwiches made easy ~ Season the roast with salt, pepper, garlic powder ~ instant pot to saute, add olive oil. When the oil is hot, sear the  roast.   Add the onions and saute. Turn instant pot off ~ Pour beef broth, worstershire and onion soup into the instant pot stirring and scraping any bits from the bottom of the pot. Add roast. ~ Cook on high pressure/manual for 60 minutes. Do a natural release for 20 minutes, then quick release.
