Pesto in Vitamix:  1/2 cup olive oil; 1/2 - 3/4 cup parmesan cheese;  3 cloves of garlic peeled;  2 cups of fresh basil;  3 T pine nuts (can substitute walnuts);  S&P to taste

Roasted Parmesan Potatoes  these were Delicious!   Creamy on the inside and crispy on the outside.  I was making garlic bread, so instead of using the broiler, I brushed garlic butter (melted) on both the pan and the potato halves, then sprinkled both with parmesan.   Placed the potatoes,  cut side down on the baking pan and placed in the 425 oven for 10 to 15 minutes.

Make ahead Breakfast Burritos... Can Freeze and take out one at a time, microwave, for a quick breakfast on the go - better than packaged and less sodium. It only made 13 but they are yummy! Being a vegetarian, I will use Morning Star Starter in place of sausage.
