Recipe for Stuffed Green Peppers with Brown Rice, Italian Sausage, and Parmesan. Healthier options: sub lean ground beef for 1/2 sausage, sub 1/2 rice for sauteed carrot, celery, zucchini and extra bell pepper bits! More veggies, less other junk! Brown rice instead of white, the texture actually adds to the dish!
Stuffed Bell Peppers - one cup of long-grain brown rice, barely slicing off the bottom of the bell pepper to make a flat spot for the pepper to stand on, slice off a generous portion of the stem end. Remove the stem and chop up the bell pepper and one large onion finely. saute the peppers and onions for 3-4 minutes, until they are starting to soften but aren't browned. Remove the onion/pepper mixture from the pan and brown 2 turkey italian sausage links. Return onion/pepper mix to the pan. Add dried spices and saute 2-3 minutes to blend the flavors. Then mix in the cooked brown rice and Parmesan cheese and cook 1-2 minutes to warm the mixture. Stuff the filling mixture into the peppers, pushing down with a spoon so the peppers are tightly stuffed. Cook the stuffed peppers at 375 F/190C for about 30 minutes. After 30 minutes, remove from oven and put a generous pinch of grated mozzarella on top of each pepper. Put peppers back in the oven and bake 10-15 minutes more, or until cheese is melted and lightly browned. Serve hot.

Spread oil on bottom of 11×17 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside. Drain chopped spinach well, pressing between paper towels. Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly.

Cheesecake Pops To Die For!! - they seriously were to die for! Brought them to my friend's christmas party and they were a big hit. To save on time I bought a pre made cheese cake!
Cheesecake Pops To Die For!! I am so excited to be part of the April class of Daring Bakers. My first challenge was a mixture of old and new. I've made cheesecakes before, but it's been a while. I have a smashing lemon cheesecake recipe that was a hit during '06-'07, but I made it so often that I tired of it and stopped. I haven't made it in over a year, so my cheesecake skills are a little rusty. On the "new" side, I don't have a lot of experience with chocolate, so working with tempered chocolate is good practice for me. Like Sharon's recent project, I made a mistake that proved to be quite fortuitous. Before I elaborate, here's the original recipe: Cheesecake Pops (from Sticky, Chewy, Messy, Gooey by Jill O'Connor) Makes 30 – 40 Pops Ingredients 5 8-oz. packages cream cheese at room temperature 2 cups sugar ¼ cup all-purpose flour ¼ teaspoon salt 5 large eggs 2 egg yolks 2 teaspoons pure vanilla extract ¼ cup heavy cream Boiling water as needed Thirty to forty 8-inch lollipop sticks 1 pound chocolate (can use various mixtures of dark, milk, white or use confectionary coatings), finely chopped 2 tablespoons vegetable shortening Assorted decorations such as chopped nuts, colored jimmies, crushed peppermints, mini chocolate chips, sanding sugars, dragees - Optional Procedure Position oven rack in the middle of the oven and preheat to 325 degrees F. Set some water to boil. In a large bowl, beat (low speed on a mixer) together the cream cheese, sugar, flour, and salt until smooth. Add the whole eggs and the egg yolks, one at a time, beating well after each addition. Beat in the vanilla and cream. Keep the speed low. Grease a 10-inch cake pan, and pour the batter into it. Place the pan in a larger roasting pan. Fill the roasting pan with the boiling water until it reaches halfway up the sides of the cake pan. Bake until the cheesecake is firm and slightly golden on top, 35 to 45 minutes. Remove the cheesecake from the water bath and cool to room temperature. Cover the cheesecake with plastic wrap and refrigerate until very cold, at least 3 hours or up to overnight. When the cheesecake is cold and very firm, scoop the cheesecake into 2-ounce balls and place on a parchment paper-lined baking sheet. Carefully insert a lollipop stick into each cheesecake ball. Freeze the cheesecake pops, uncovered, until very hard, at least 1 – 2 hours. When the cheesecake pops are frozen and ready for dipping, prepare the chocolate. In the top of a double boiler, set over simmering water, or in a heatproof bowl set over a pot of simmering water, heat the chocolate and shortening, stirring often, until completely smooth. Alternately, you can microwave the same amount of chocolate coating pieces on high at 30 second intervals, stirring until smooth. Quickly dip a frozen cheesecake pop in the melted chocolate, swirling quickly to coat it completely. Shake off any excess into the melted chocolate. Roll the pops quickly in decorations, if using. Repeat with remaining pops, melting more chocolate and shortening (or confectionary chocolate pieces) as needed. Refrigerate the pops for up to 24 hours, until ready to serve. What did I do wrong? I lost my patience and accidentally overbaked. Note that the baking time is supposed to take 35-40 minutes. From a lot of reports from other DBs who had finished the challenge, the baking was taking much longer. I baked it for 45 minutes, only to find a creamy soup. I left it for another 30 minutes to find it firming, but still very loose. I glared at it, then set the timer for 30 more minutes and went to take a shower. Yes, I know that's a mistake. However, it did work out in my favor as the overbaking resulted in a firm consistency that required almost no refrigeration before scooping. It also didn't seem to affect the final product, as the cake was still quite creamy. So, I started scooping, put it in the fridge for 15 minutes after I reached the middle of the cake, and was able to freeze the pops right away. The rules required that we follow the cheesecake recipe (exemption for allergies and dietary restrictions), but we could use whatever dip/decoration we wanted. As previously mentioned, I have a weakness for Cheesecake Factory's Adam's Peanut Butter Fudge Ripple. To recreate the flavors, I mixed peanut butter into the melted chocolate and dipped the pop in crushed Butterfingers. Mixing the peanut butter was a bit of a gamble as I wasn't sure whether the chocolate would still harden into shells. I started with a half portion of the dip. Using my kitchen scale, I weighed out 5 oz. dark chocolate, then brought it up to 8 oz. with peanut butter. Add 1 tbsp. of shortening and melt the whole mixture in a bowl placed over a pot of simmering water. Luckily, it turned out beautifully. The other change I made was the sticks. Instead of using lollipop sticks, I decided to use Pocky sticks. They're edible and fun. Hehe. Two downsides: chocolate melting on the fingers and the sticks not being too strong. I have a lot of shortened sticks. The sticks taste a lot like the Adam's Peanut Butter Fudge Ripple and are really rich and decadent. I loved them and they'll make a great party treat. Right now, however, I need help with the 50+ pops. Anyone want some?

Blender French Toast with Coconut Syrup -Alyssa Griffeth- 4 eggs 1 c. milk 1/4 tsp. salt 2 tsp. vanilla 1/4 c. + 2 T. flour 1 lg. loaf French bread, sliced thick (about 12-13 slices) In blender, combine all ingredients except bread. Blend until mixture is lump-free. Transfer to a shallow bowl. Quickly dip both sides of bread in mixture and place on greased, hot skillet (heated to 325 degrees). Flip over when browned. Serve with hot Coconut Syrup. Coconut Syrup 1/2 c. butter ¾ c. buttermilk 1 c. sugar ½ tsp. baking soda 1 tsp. coconut extract Place butter, buttermilk and sugar in a medium saucepan. Stir over medium heat until butter melts and sugar dissolves. Bring to a boil and boil one minute. Remove from heat and add baking soda and extract, stirring constantly. It will bubble up, so if your pot is small, hold it over the sink to avoid spillage. Continue to stir syrup and let it rest for a few minutes before serving. Serve over almost any breakfast food: waffles, pancakes, French toast, crepes, etc.

Raspberry Swirl Sweet Rolls Servings: 16 rolls Ingredients For the dough 1 cup milk 2/3 cup sugar 1 and 1/2 tablespoons active dry yeast 1 stick unsalted butter, softened 2 large eggs 1 teaspoon finely grated lemon zest 1/2 teaspoon fine sea salt 4 and 1/4 cups all-purpose flour, plus more for dusting***I made a boo-boo and ran out of white flour in the middle of this. I substituted half white and half whole wheat flour, and they still turned out just fine! For the filling One 10-ounce package frozen raspberries, not thawed***Try substituting different berries or a mixture of them! 1/4 cup plus 2 tablespoons sugar 1 teaspoon cornstarch For the glaze 3/4 cup confectioners’ sugar 3 tablespoons unsalted butter, melted 1 and 1/2 tablespoons heavy cream Instructions 1. For the dough: In a small saucepan, warm the milk over moderately low heat until it’s 95°. 2. Pour the warm milk into the bowl of a standing electric mixer fitted with the dough hook and stir in the sugar and yeast. 3. Let stand until the yeast is foamy, about 5 minutes. 4. Add the softened butter, eggs, grated lemon zest and sea salt. 5. Add the flour and beat at medium speed until a soft dough forms, about 3 minutes. 6. Increase the speed to medium-high and beat until the dough is soft and supple, about 10 minutes longer. 7. Scrape the dough out onto a lightly floured surface and knead it with your hands 2 or 3 times. 8. Form the dough into a ball and transfer it to a lightly buttered bowl. 9. Cover the dough with plastic wrap and let stand in a warm place until doubled in bulk, 1 to 2 hours. 10. Line the bottom of a 9-by-13-inch baking pan with parchment paper, allowing the paper to extend up the short sides. Butter the paper and sides of the pan. 11.Turn the dough out onto a lightly floured work surface and, using a rolling pin, roll it into a 10-by-24-inch rectangle. 12. For the filling: In a medium bowl, toss the frozen raspberries with the sugar and cornstarch. 13. Spread the raspberry filling evenly over the dough. Tightly roll up the dough to form a 24-inch-long log. 14. Working quickly, cut the log into quarters. Cut each quarter into 4 slices and arrange them in the baking pan, cut sides up. Cover the rolls and let them rise in a warm place until they are puffy and have filled the baking pan, about 2 hours.*****I let mine rise for the two hours at room temperature, and then I covered them with plastic wrap at that point and popped them into the refrigerator overnight. I brought them back up to room temperature the next morning as the oven preheated. 15. Preheat the oven to 425°. 16. Bake the rolls for about 25 minutes, until they are golden and the berries are bubbling. Transfer the pan to a rack to cool for 30 minutes. 17. For the glaze: In a small bowl, whisk the confectioners’ sugar with the butter and heavy cream until the glaze is thick and spreadable. 18. Invert the rolls onto the rack and peel off the parchment paper. Invert the rolls onto a platter. Dollop glaze over each roll and spread with an offset spatula. Serve warm or at room temperature.
