Recipe for Mashed Potatoes in a Crock Pot -I just made these with Russet potatoes. I made just under 5 lbs for 4 people, I only used 1 stick of butter, and added chicken stock instead of water. They only needed 3 hours - they were starting to burn. They taste JUST like a baked potato, I got a thumbs up from everyone! Could add 4 oz cream cheese and chives.
