Latest soup creation: Onion, garlic, borlotti beans, tinned tomatoes, pasta, oregano, chilli, salt and pepper. Yum!

Potato and Parsnip Soup: Fry onions till soft, add chopped garlic, potatoes, parsnips, carrots and curry paste/powder and fry for 5 mins. Add veg stock, cook till veg are soft, and whizz in a blender. Easy!

Combine 3 ounces water-packed tuna, drained, with 1/2 cup halved grape tomatoes; 1/2 cup canned artichokes, drained and quartered; 3 tablespoons sliced pitted black olives; 1 tablespoon fresh lemon juice; and 2 teaspoons olive oil with pasta.  Add salt and black pepper to taste; serve.
