Pretty pictures and looks YUMMY! I would definitely change the recipe though! Using full-fat ingredients makes it lower in carbs, plus we need the fat when we're eating low carb. Note that the nutrition information at the bottom shows 0g carbs...this recipe is definitely not 0g as written! (30g for 3c of spaghetti squash; 7G in the flour; 1G per clove of garlic; 10g for 3/4c 2% milk...and so forth. That's nearly 50g per serving and I didn't even count everything.) ~ Sherry
Spagetti squash Alfredo
Skinny spaghetti squash alfredo- 1 medium sized spaghetti squash1 tbsp butter2½ tbsp flour(whole grain is fine)2-3 cloves of garlic, very finely minced, grated or pressed1 tbsp cream cheese(low fat is fine)1½ C milk(low fat is fine)1 C freshly grated, not packed Parmesan cheese(about 60g or 2.1oz), plus 2 tbsp extra for topping¼ tsp saltInstructionsFirst prep the spaghetti squash. Preheat the oven to 350 degrees. Cut the spaghetti squash in half using a large sharp knife, scoop out the seeds and place cut side down on a rimmed baking sheet covered with water. Bake until tender, about an hour Alternatively, keep the spaghetti squash whole. Poke a few holes deep into the squash with a large knife. Place in the oven whole. Bake for 60 minutes, remove from the oven and let rest for 10 to 20 minutes before slicing in half with a large serrated knife like a bread knife. Scoop out the seedy inside leaving the spaghetti strands. Once cooked, use a fork to gently scrape the “spaghetti” strands into the center.For the sauce, melt the butter in a small pot. Once hot add the garlic and saute for 1-2 minutes over medium low heat. Add the flour and whisk into the butter. Cook for another minute while stirring. Add the cream cheese, warm it up and stir it in to the butter mixture.Add the milk and whisk well. Bring up to a gentle simmer then remove from the heat. Add the freshly grated cheese and salt and stir until melted, just a minute or two. Pour half the sauce into each spaghetti squash half(or less if using a smaller squash). Gently stir to combine. Top with an extra sprinkle of Parmesan and place under the broiler of your oven for 2-3 minutes until golden and bubbly. Serve immediately.

It’s a “bread” without carbs and can be eaten in a variety of ways. Oopsies 6–8 depending on size. 3 eggs 100 grams (3.5 ounces) of cream cheese a pinch of salt ½ tablespoon fiberhusk / psyllium seed husks (can be excluded) ½ teaspoon baking powder (can be excluded) Separate the eggs, with the egg whites in one bowl and the egg yolks in another. Whip the egg whites together with the salt until very stiff. You should be able to turn the bowl over without the egg whites moving. Mix the egg yolks and the cream cheese well. If you choose, add the psyllium seed husk and baking powder (this makes the Oopsie more bread-like). Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites. Put 6 large or 8 smaller oopsies on a baking tray. Bake in the middle of the oven at 150° C (300° F) for about 25 minutes – until they turn golden. You can eat Oopsies as bread or use them as a bun for a hotdog or hamburger. You can also put different kinds of seeds on them before baking them, for instance poppy, sesame or sunflower seeds. One big Oopsie can be used for a swiss roll: Add a generous layer of whipped cream and some berries. Enjoy.

Bake 2-3 hours (check them at 2 hours and see how long they need from there). The longer you bake them the crunchier they will be. Patience pays off in this recipe!
