SCOBY hotel If you need a break from brewing or want to go on a vacation (please take me with you), you can make a SCOBY hotel. Simply prepare your tea as usual for kombucha—brew, sweeten, cool, innoculate—and add all your SCOBYs. Cover the vessel with a cloth and let the tea sit for up to six weeks. At that point, make a new hotel for your hungry SCOBYs. Like all living creatures, they will need some food to survive. At any point, remove a SCOBY or two to brew more tea when you feel ready

I wanna start my own continuous-brew kombucha! To start a SCOBY, mix one bottle (16 oz.) of plain raw kombucha from the store with 2 cups of room-temp sweet tea (green or black). After the culture is established, drink kombucha and then add an equal amount of sweet tea to the container to start more fermenting. Clean container with vinegar every 4 months or so or when spigot gets clogged or SCOBY is really big and needs separating and then resume brewing.

Raspberry Lavender Kombucha. Pour the brewed kombucha into clean jars.  Fill them almost to the top but leave a little space for them to get fizzy and to add the flavor.  Add ¼ of the berries to each jar, 1 Tbsp lemon juice, and 1 Tbsp dried lavender.  Put the lids on tight and let sit 3-5 days at room temperature to ferment and become carbonated.  Once they are fizzy, you can strain them into other clean jars (or not depending on your taste).
