We used jasmine rice rather than quinoa, added some sautéed veggies and it was really good. I may do more sauce next time, because we are a saucy bunch, but it was really good. Also, don't skimp on the sesame oil or sesame seeds, they really make the dish.

Sweet Potato Hummus 1 c sweet potatoes, peeled and diced 1 can garbanzo beans (19oz), rinsed and drained 2 T fresh squeezed lemon juice ¼ c Tahini (sesame paste) 5 garlic cloves, roasted or raw 1 T extra virgin olive oil ½ t cumin 1 tsp salt water Steam or slow cook the sweet potatoes until soft. In a food processor: add ingred. & @2T of water. Pulse the mixture until smooth, adding water to thin mixture. Adjust seasoning & serve w/ a drizzle of olive oil & sprinkle some paprika.
