Roasted Vegetable Orzo Salad - This is FABULOUS! I omitted the pine nuts and used a can of drained cannellini beans. I would cut back the salt a little too and maybe add fresh, chopped grape tomatoes to take it up another notch. This really is delicious and I got so many compliments.
