Just made this. But I substituted turkey bacon for the sausage, egg beaters for the eggs, and 2% cheese. I also added a few whole wheat bread crumbs (about 2 slices for the whole pan) at the bottom of each cup before adding the egg mixture on top. My version is about 50 calories per "muffin" ... like a previous pinner, I'll freeze these so I can just pop a couple into the microwave for breakfast.
