Well, we are here to transform those who hate it to the other ones! It is a delicious side dish, especially in this combination when it’s balsamic roasted! You’ll be truly surprised.
Balsamic Roasted Brussels Sprouts - Ingredients: 1 pound of Brussels sprouts 1/8 cup pine nuts, finely diced Balsamic vinegar Olive oil Parmesan cheese Instructions: 1. Trim and peel away the outer leaves of each Brussels sprout and then half them. 2. Slide the Brussels sprout halves onto the skewers, about six to eight halves per skewer. 3. Line a baking dish with parchment paper and places the skewers halved-side up. 4. Drizzle olive oil and balsamic vinegar over each skewer, trying to “fill up” the Brussels sprouts. 5. Bake the skewers at 400 degrees for about 30 minutes until they are cooked and crispy. 6. Plate the skewers on a serving tray and cover them with shaved Parmesan and the pine nuts.

Pesto Ricotta Pie: 6 tablespoon(s) butter, 1 large leek, trimmed, washed, and thinly sliced, 2 large eggs, 2 large egg whites 1/4 cup(s) cream, 1 cup(s) ricotta 1/2 cup(s) grated parmesan, 3 tablespoon(s) chunky chopped pesto (see recipe below) 2 tablespoon(s) finely chopped fresh parsley leaves 1/4 teaspoon(s) salt 1/4 teaspoon(s) ground black pepper. *Directions: Heat the oven to 375 degrees F. Lightly butter 9-inch pie plate and set aside. Heat 2 tablespoons butter in a medium skillet over medium-high heat. Add the leeks and cook, stirring often, until soft, 5 to 7 minutes. Transfer to a large bowl and set aside to cool. Whisk the eggs, egg whites, and cream together in a medium bowl, add to the leeks with the ricotta, Parmesan, pesto, parsley, salt, and pepper. Stir to combine and set aside. Melt the remaining 4 tablespoons butter. Lay one sheet of phyllo in the prepared pie plate. Brush the phyllo with melted butter, leaving the outer 1 1/2-inch rim unbrushed. Repeat with seven more sheets of phyllo. Trim the edges to conform with the shape of the pie plate using kitchen shears and pour in the filling. Brush the top of the phyllo rim with butter, and bake until the edges are golden brown and the filling is set, about 40 minutes. Cool before serving. *Tips & Techniques Chunky Chopped Pesto Recipe: Puree 7 1/2 cups basil leaves, 1 1/2 cups extra-virgin olive oil, 3 cloves garlic, 1 teaspoon coarse salt, and 1/2 teaspoon black pepper in a food processor. Add 3/4 cup toasted pine nuts and 3/4 cup grated Parmesan and pulse until the nuts are roughly chopped.

Danish fontina will not melt properly. If you absolutely can't find Italian fontina, brie (with the rind removed) will also work great here.INGREDIENTS1 1/2 lbs Italian fontina, rind removed and cubed into 1-inch pieces 6 cloves garlic, thinly sliced 1 tbsp fresh thyme, chopped 1 tsp fresh rosemary, chopped 3 tbsp extra virgin olive oil 1/2 tsp Kosher salt 1/2 tsp freshly ground black pepper INSTRUCTIONS: Adjust top rack of the oven so that it sits about 5 inches under the broiler unit. Preheat broiler.Spread cheese out in the bottom of a 12-inch cast iron pan. Drizzle olive oil over the cheese. Mix together the garlic and herbs in a small bowl and sprinkle the mixture evenly over the cheese. Roasted Cabbage Slices. These were super yummy because they become crusty on the outside and soft in the middle when baked. They taste almost buttery, but only use olive oil. The fennel seeds added a nice flavor. Definitely making this one again!
