This sounds amazing! I never thought about using pasta w/ Mexican dishes. There's a few Mexican dishes I've tried that I love the flavor, but don't like the way the tortillas get soggy. I think I will substitute pasta next time and make it like a lasagna.
baked shrimp scampi by i love carbs - this is the other dish made tonight and OMG yummy. Don't use all the salt, it's way too much. I toasted 2 slices of gluten free bread, chopped and crumbled it instead of using Panko.
