These are the bomb!! Brush bottom and sides of a baking dish or cast iron skillet with olive oil Sprinkle garlic and Italian seasoning on top of potatoes. Season with salt and pepper to taste. Dot potatoes with butter. Cover skillet or dish with foil and bake in a 375 F oven for about 1 hour or until potatoes are tender. Remove foil, sprinkle with Parmesan cheese and bake for another 15 to 20 minutes or until crisp.
Jalapeno Popper Spread: Beat together 2 (8 oz) pkgs softened cream cheese, 1 c mayo, 1/2 c shredded Monterey Jack cheese, 1/4 c canned chopped green chilies, 1/4 c canned diced jalepenos; spread in an ungreased pie plate. Sprinkle with 1 c shredded parmesan, 1/2 c panko bread crumbs. Bake at 400 for 25-30 minutes.
