I do this daily (: Perfectly cooked, shaped eggs - and you can bake a whole lot simultaneously: Just grab a muffin tin and and very lightly oil each spot in the tin with either butter or spray oil. Then crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes. Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!
from @Dana Adzich Make these potatoes at holiday time for big dinners. They are easy to make: Just mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden.
Weave bacon strips around a muffin tin covered in foil to catch drippings. Bake 375 for 15-20mins. Other ideas you could put scrabbled eggs or mashed potatoes or green beans inside your bowl...just other ideas
Frozen treat: yogurt-covered bananas! Put banana chunks in a mini-muffin tin. Cover with yogurt (try to get yogurt on sides of bananas, too). Freeze 2-3 hours. Yummmmmy treat or healthy dessert :) You could add sticks to make them more like yogurt-covered banana pops, but my little monkeys loved them as little frozen cupcakes.
Poached eggs -going in the oven: Preheat oven to 450 F, coat muffin tins that you're using with olive or coconut oil, add egg to each tin, sprinkle cracked pepper and herbs like parsley or chives. Bake for 10 minutes, let cool and enjoy!
