Quinoa veggie "fried rice" (okay, so i made this. it was really tasty, great flavors. the only thing to watch out for is to make sure your quinoa is not too moist. otherwise your fried quinoa ends up being a mush of fried quinoa. still tasty, just weird texture.)
Quinoa Veggie “Fried Rice” Stir fry garlic and onion 5 minutes or so. Then add mushrooms, broccoli and zucchini. Let them get nice and tender. Next, add corn, peas, carrots and cooked quinoa. Heat through. Stir in ginger and soy sauce. Add green onions and 2 already cooked scrambled eggs.
