On The Glow Basic Oatmeal Squares Think of this oatmeal square as basic baked oatmeal that can be dressed up any way you like. Each large square contains a tablespoon of flax and a teaspoon of chia seeds as well as 7 grams of fibre and 6 grams of protein. Feel free to add in nuts, dried fruit, chocolate, and other mix-ins as you desire. Just be careful about frozen fruit. When I made a trial with frozen blueberries they became quite soggy. Use fresh blueberries and you should be fine. Yield: 9 large squares Ingredients: 2.5 cups regular rolled oats (not instant oats), divided 3 tbsp chia seed 1/2 cup + 1 tbsp ground flax 1 tsp cinnamon 1 tsp baking powder 1/4 tsp kosher salt 1.5 cups almond milk (or other milk) 1/2 cup pure maple syrup (or other liquid sweetener) 2 tbsp nut or seed butter 1 banana, chopped small 1 tbsp pure vanilla extract Dry sweetener, to taste if you want them a bit sweeter 1. Preheat oven to 350F and line an 8 inch square pan with two pieces of parchment paper. 2. In a blender or food processor, blend/process 1 cup of the oats until a flour forms. Or you can just use 1 cup of oat flour. 3. In a large bowl, mix together the dry ingredients: oat flour, 1.5 cups rolled oats, chia, flax, baking powder, salt, cinnamon. In a smaller bowl, whisk together the wet ingredients: milk, syrup, nut/seed butter, banana, vanilla until no clumps remain. Add wet to dry and stir until combined. Add dry sweetener to taste if desired. Fold in any nuts or dried fruit that you desire. 4. Pour mixture into prepared pan and smooth out. Bake for 35-40 minutes until lightly golden along edge and it springs back slowly when touched. I baked them for 40 minutes, but baking time may vary. Place pan on cooling rack for 10 minutes, carefully remove, and cool on rack before slicing. Nutritional Info: (per square, makes 9 squares): 228 kcals, 9 grams fat, 110 mg sodium, 33 grams carbs, 7 grams fibre, 13 grams sugar, 6 grams protein.

Vegetable and Edamame Pasta with Basil Cream Sauce by Angela Liddon Prep Time: 15 mins Cook Time: 10-15 Keywords: stove top food processor entree side vegetarian vegan sugar-free nut-free gluten free option Share Full Post Print Email Text This pasta is fresh, fresh, fresh…and creamy, but light enough for Spring and Summer. I can't wait to make it with vegetables grown from the garden! Ingredients (4-6 servings) Approx 300 grams (about 5 cups uncooked) Rotini or Penne pasta (I used Kamut rotini) 1-2 tsp extra virgin olive oil 1 cup chopped sweet onion 3 garlic cloves 1 orange bell pepper, chopped 1 yellow bell pepper, chopped 1 small zucchini, chopped 2 tomatoes, roughly chopped 1 cup frozen edamame (or bean of choice) Basil sauce: 1 cup packed fresh basil, 1 small avocado (or half large), 1/4 cup fresh lemon juice, 2 tbsp water, 2 tbsp olive oil, 1 tsp kosher salt, black pepper & red pepper flakes (to taste) Kosher salt, pepper, red pepper flakes, to taste (I used lots of red pepper flakes so it had a nice kick to it) Instructions 1. Bring a large pot of water to a boil. 2. Sautee onion, olive oil, and minced garlic in a large skillet for about 5 minutes on medium heat. Add in chopped vegetables (except for the tomato) and edamame. Sauté for another 10 minutes. Reduce heat as needed. 3. Meanwhile, add the pasta to the boiling water and cook for 9-11 minutes, being careful not to overcook. Pour into colander and rinse very well with cold water to stop the cooking process. Set aside. 4. In a food processor, make the basil cream sauce by processing the basil, water, olive oil, lemon juice, avocado, salt, black pepper, and red pepper flakes until smooth (or just about). 5. Just before the vegetables are done cooking, add the chopped tomatoes, and cook for another 5 minutes until tender. 6. Add drained pasta to the vegetables in the skillet. Mix. Now, pour on the basil cream sauce and stir until combined. Season with salt, pepper, and red pepper flakes, to taste. Garnish with basil leaves. Serve warm or cold. Makes 4-6 servings.

Healthy snack: Salt and vinegar roasted chickpeas... SO Good, great alternative to salt and vinegar potato chips :)
Easy Salt & Vinegar Roasted Chickpeas Adapted from Homemade Salt & vinegar Chips and Green Beans. Ingredients: 2 cups canned chickpeas* 3-4 cups white vinegar 1 tsp Coarse sea salt 2 tsp extra virgin olive oil Directions: Line a baking sheet with tin foil or parchment paper. Take chickpeas and vinegar and place in a medium sized pot. Add a dash of sea salt. Bring to a boil and then remove from heat. Let sit in pot for 30 minutes. Preheat oven to 425F. Carefully drain chickpeas. Place on lined baking sheet and drizzle with olive oil and sea salt. Massage with fingers until fully coated. Roast for 45 minutes, flipping once half way through. Keep a careful eye on them after 35 minutes of cooking to ensure they don’t burn. The goal here is crispy and golden chickpeas, not black…lol. Enjoy as a high protein snack or as a side to a lunch or dinner. *Note: I assume you could also use dry chickpeas and cook them in vinegar from scratch. Also note: When I brought the cooked chickpeas to a boil, some of the peas split open and some of the skins came off. Not to worry if this happens-it will turn out regardless!

Spinach Tomato Orzo Soup 1 large onion, chopped 2 cloves garlic, chopped 1 lb spinach, fresh or frozen, defrosted 1 – 15 oz can diced Italian tomatoes (with oregano and basil) 1 lb pkg orzo pasta 2 quarts chicken or vegetable stock 2 quarts water olive oil 1. In dutch oven drizzle with EVOO. Add onions and saute until tender. Add garlic, saute for 2 min. Add tomatoes, spinach, stock and water. Bring to boil and reduce heat to medium. 2. Add orzo cook for 12 or until orzo is tender.
