This is one of my favorite things for lunch, and to pair with a salad. It is full of of fiber, has a bit heat to rev-up your metabolism, it's refreshing with the fresh lime juice, and low-calorie! Belly-Blasting Soup * 1 (28oz) can of tomatoes with the juices * 2 (15 oz) cans of chickpeas * 3 cloves of garlic * 4 cups of vegetable stock * 1 tbsp chili powder * 1 tbsp smoked hot paprika * 1 tbsp cumin * 1/2 cup fresh lime juice * 3/4 cup fresh chopped cilantro 1. In a large sauce pan over high heat, start to boil the vegetable stock. 2. In a food processor, pulse the tomatoes, chickpeas, and garlic until the chickpeas are finely minced. 3. Add the tomatoes, chickpeas, and garlic to the vegetable broth and continue to bring to a boil. Add in the chili powder, paprika, and cumin. 4. Once boiling, reduce heat to a simmer and boil for 10 minutes. 5. Remove from heat, stir in the lime juice and cilantro. 6. Serve and enjoy! Pace, amore e felicità! Bailey Rae
