Crockpot Lentil Sweet Potato Stew - this came out a little soupy in the crockpot. I think I would reduce the water to 4 cups.  It was well spiced, though!

Of course, I use vegetable oil for the vegetarian in the house.  These are just as easy as canned refried beans and I think they taste a whole lot better!

Chicken with Hearty Mushroom Sauce - You can do this with dried basil but it's just not the same.  I don't use anchovies.  The trick is to let the vegies simmer in the balsamic for the full minute -- the mushrooms really absorb the flavor nicely!
