Sour Cream Chicken Enchilada Casserole. Added ~2 t. cumin, ~2 t. chili powder and ~1/4 t. salt. I did not use corn tortillas (not my favorite), but I did cut up two (three would be better) larger flour tortillas and mixed them in before baking. I used low fat sour cream and low fat chicken soup. I served with Spanish rice and tortilla chips (for crunch). It would work well to leave tortillas out altogether and just serve this with/over tortilla chips. I will make again!
