on the menu: mexican vegetable soup with lime and avocado . I would sub out vegetable stock for the chicken stock and corn for the hominy. Would add some shredded chicken to a separate portion for my hubby
Sweet Potato Crusted Fish w/Cilantro Lime Vinaigrette: stars Sounds really fancy, and it was decent. But the fish was a bit difficult to cook well while crusted with the sweet potato, and the vinaigrette was just a little too powerful of a flavor.
Rosemary Sweet Potato Stackers made in muffin tins at bowl whisk together oil, chopped rosemary, salt, and pepper. Add 5 sliced sweet potatoes and toss to coat evenly. Layer slices into muffin pan and fill to the top.
