Chicken Ropa Vieja 5ww points Shredded chicken breast with peppers and onions and lots of Latin flavor. Cuban cuisine is a favorite of mine and Ropa Vieja, traditionally made with shredded skirt steak, cumin, peppers and onions is a flavorful dish usually served with white rice and plantain. Chicken makes a wonderful lighter alternative to this recipe. A great way to keep your meat dishes low in points is to use meat as a condiment and add lots of vegetables. I find cooking the chicken first in my crock pot makes this easier, but you can cook it on the stove as well. To make this with beef, substitute the chicken breast with skirt steak. I used my leftovers to make a burrito bowl (I love Chipotle!) for lunch the next day served over brown Cilantro lime rice, Southwestern black bean salad, lettuce and shredded cheese and it was fabulous and healthy!

Low fat and low in points. Serve over rice with chopped scallions, fresh cilantro, fat free sour cream and reduced fat cheddar. Crock Pot Santa Fe Chicken Gina's Weight Watcher Recipes Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g 24 oz (1 1/2) lbs chicken breast 14.4 oz can diced tomatoes with mild green chilies 15 oz can black beans 8 oz frozen corn 1/4 cup chopped fresh cilantro 14.4 oz can fat free chicken broth 3 scallions, chopped 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 tsp cayenne pepper (to taste) salt to taste Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Fiesta Lime Rice Rice, black beans, tomatoes, scallions, cilantro and lime juice, every bite of this colorful side dish will feel like one big fiesta in your mouth! Use leftover rice and this side dish comes together in minutes. I think my love of rice is innate having a Hispanic mother. This dish started as the filling for a vegetarian stuffed pepper recipe I dreamed up in my head, but when I put all the stuffing ingredients together all I kept thinking was... Wow this would be wonderful as is, or with some Chicken Ropa Vieja and melted cheese on top, or as a big burrito bowl topped with Sweet Barbacoa Pork or Barbacoa Beef or Pork Carnitas! You see excited a bowl of rice can make me! So I decided to make this a two part recipe. Today I will post this as a side dish and let you decide how you want to eat it. Tomorrow stuffed peppers!! There is always leftover rice in my house, my kids love it and leftovers make great lunches mixed with whatever we had for dinner the night before. If you don't have any cooked rice you can cook about 1 cup rice with salt and 2 cups of water to make enough rice for this.
