Buffalo Chicken Quinoa Salad. This has to in the top 5 of my absolute favorite recipes I've tried! I used red quinoa w/chia seeds, A LOT of broccoli, subbed spinach for cabbage (I just didn't have it. This would be amazing with cabbage) and subbed in 3 TB of organic grass-fed butter + 2 TB of MCT oil in for the olive oil in the dressing as well as left out the seasoned salt (hot sauce is plenty flavorful/salty enough). To saute the veggies (I also added onions/garlic), I used coconut oil. YUM.

Pour marinade over meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.
