Asian slaw - 25 Stars! This is DELICIOUS! The ginger-peanut dressing is a keeper for other recipes as well. Took less than 15 minutes to pull together with bagged slaw and shredded carrots. I added tofu to give it a bit more protein and have a meatless meal. Just terrific!

Potatoes baked in Chicken Broth, Garlic and Butter, SO GOOD! They get crispy on the bottom but stay fluffy inside. Chocked full of flavor.

Crispy Edamame -- frozen edamame, olive oil, parmesan cheese, salt and pepper...baked at 400 for 15 mins.

One of my favorite all time veggie side dishes is roasted cauliflower. So YUMMY! I just thaw cauliflower and toss it in a bag with olive oil and minced garlic, shake around, then lay out in a pan and sprinkle with parmesan cheese. Cook high, like at 450 degrees or so, stirring off and on and adding more parmesan if you want. I just watch it until it gets brown. YUM!
