Banana Fritter Recipe - Pandaw Cruises (Mekong River) Batter Cake flour 500 g Custard powder 150 g Sesame seed Baking powder ½ tea spoon Sugar 200 g Coconut milk 350 ml Egg whole 2 pcs Water 150 ml Method Put all ingredient in a bowl mix well. Use Banana ripe, peel and cut length wise. Put cooking oil 3 litters in a deep fried pan and heat the oil until hot. Put banana in the batter and deep fried until the banana become golden colour and crispy. Normally we serve with honey or syrup.
Seafood Fritters: 1/4 lb. conch, 1/4 lb. shrimp, peeled & chopped, 1/4 lb. snapper or any fish, 1/2 medium onion, 1/2 medium red & green pepper & 2 celery stalks chopped, 1 jalapeno, seeded/chopped 1 1/3 cup flour sifted, 2 tsp baking powder, 1 egg, 8 dashes Tabasco, 1 1/2 tbs. salt, 1 1/3 cup milk. Combine seafood, vegetables, salt & Tabasco mix well. Add flour, baking powder egg & mix. If too thin, add flour; if too thick, add 1 TBS milk Spoon into oil heated to 350º. Cook until golden brown
Risotto alla Milanese - Costa Cruise Line Ingredients: 8 cups chicken broth, 2 cups Chablis wine, 1 cup arborio rice, 2 cups diced shallots, 4 oz butter 1/3 tsp. saffron powder, 2 cups grated Parmesan cheese, Pepper to taste. Sauté shallots in olive oil on medium heat. Add arborio rice & stir for 2 minutes Add wine & continue to heat until wine is absorbed. Gradually add chicken broth & stir constantly When rice is fully cooked, remove from heat Stir in saffron, parmesan, pepper & butter.

Crystal Cruises Black Cod with Miso Nobu-style saikyo-miso sauce: ½ cup sake, ¾ cup mirin, 2 cups white miso paste, 1 ¼ cups granulated sugar 4 black cod fillets. Bring sake & mirin to a boil over high heat. Boil to evaporate alcohol. Cook on low & add miso paste. When miso dissolved increase heat to high & add sugar, stirring constantly. Remove once sugar is dissolved. Cool. Set aside ½ cup of sauce for next day.
