It's fig season and I brought home some beautiful black mission figs from Whole Foods to make one of my favorite dishes. I use balsamic vinegar in place of wine, a dark amber honey & I like to use a mix of dark brown sugar & demerara sugar. A perfect mix of savory and sweet.

Oven roasting fresh figs makes them extra delicious & is a good way to preserve the bounty. A recipe from chef & cookbook author David Lebovitz.

Delicious! What more can I say?

Avocado Pesto - so easy! Throw in food processor et voila! 1 bunch fresh basil, reserve some leaves for garnish ½ cup pine nuts 2 avocados, pitted and peeled 2 tablespoons lemon juice 3 cloves garlic ½ cup olive oil Sea salt Freshly ground black pepper

Made this tonight and it was delish! I might reduce the ginger and red pepper flakes by half, a little hot for the kids. But they still ate it up. Healthy and delish all in one dish!

With summer just around the corner, the supermarkets are already full of tasty vegetables from Europe perfect for creating delicious summery salads.
